BEFORE STARTING

Many times we see photos of beautiful decorated cakes but what we do not know is if the cake will stay beautiful for a long time, because I say this, then think about if our cake has several layers it means that it has some filling and if there is too much filling the cake It will start to move or even the filling would come off the edges and with the passage of time this would ruin all our decoration, no matter how beautiful it is, it would ruin everything and it would not be of any use especially if the cake is a job for a client, having that in mind let's start.

WE START WITH THE BASICS

When we have our cake or sponge cake ready to start decorating it, it is normal for it to have protruding edges, this in some cases, so if you want you can even the edges with a knife or spatula, we can leave it like that if we want but I recommend that you do so. Do because if we leave it like that we would have to put more filling, and as we mentioned before that could ruin our decoration.

WE MAKE THE CAKE

Now we start with our decoration and the first step is to assemble our cake, the ideal would be to place it on a styrofoam base, which is what is generally used, then we put a little cream on the base to then put the cake and that it is not move, it is a small trick that will serve you a lot, now we place the cake and on top we put more cream or the filling of your choice and we do this with a spatula but if you don't have it, don't worry, just do it with a spoon or knife since it is normal not to have the perfect utensils for everything. Let us remember that we must not overdo it so as not to ruin the final work, we repeat the process for the layers of cake that you want, the normal thing when this process is finished is that it is not perfect but remember that we are learning and it is normal, the essential thing is that the cake be firm and if the spaces of the cake layers are empty (at the edges) we can put a little cream or the filling used to match the cake.

WE COVER THE CAKE TO DECORATE IT

We now continue with the process to cover our cake with cream, for this it is important to leave our cake already assembled for about 15 minutes in the freezer, you will wonder why and it is very simple, we do this so that the cake is firmer because if the filling cools it will get harder and when it comes to spreading the cream to cover it, it does not fall apart.

Now we spread the cream on the sides of the cake and we want it to be as even as possible, we can achieve this with a knife or if we have a much better spatula, but if they do not have, with the knife it will be enough, we will try to get what as smooth as possible.

When it is ready we can cover the upper part, we repeat the process taking care of the amount of cream to use and we will do our best to make it smooth and there are no areas with more cream than others. Remember and I repeat oooooo again, it does NOT matter if it does not look good the first time, do not be discouraged and continue practicing so that later it will be super beautiful and perfect, even the best pastry chefs and pastry chefs went through this learning process in which they practice it. makes the true teacher.
